Black trumpets are hollow, thin-fleshed and nearly black, which makes them hard to find and quick to dry. The French name, trompette de la mort, refers to the colour; the mushroom itself is a choice edible related to chanterelles.
We sell fresh black trumpets by the kilo in autumn and quote dried trumpets for year-round supply. Dried trumpets rehydrate in 20 minutes and are often blitzed into a seasoning for fish, eggs and pasta.
