About Chanterelle

Chanterelles have never been cultivated at scale, so the supply follows the forest. Our European chanterelles come from Poland, Lithuania and Belarus between June and October; Pacific Northwest and Canadian lots extend the season into winter.

Fresh chanterelles are cleaned of needles and soil and graded by cap size: small buttons for fine dining, medium for retail, large for processing. Dried chanterelles are quoted on request.
