Seasons & storage

Premium Wild Mushrooms by Season: When to Buy Morels, Porcini, Chanterelles and Truffles

A month-by-month guide to the wild mushroom year, and which ones are worth buying dried or frozen out of season.

Wild mushrooms cannot be farmed to order, so buyers plan around the forest. Combining origins in both hemispheres stretches most seasons.

Spring: morels

Cultivated Chinese morels from February, Himalayan wild morels in April and May, European and North American wild morels into June. Morels dry well, so dried stock covers the rest of the year.

Summer: chanterelles

Baltic and Polish chanterelles run from June to October. Pacific Northwest chanterelles continue into winter.

Late summer and autumn: porcini, matsutake, white truffle

Winter: black truffle

European Périgord black truffles from December to March, then Australian truffles from June to August.

All year

Cultivated species such as lion’s mane, shiitake, maitake and king oyster are available year-round. See the cultivated range.
