Wild mushrooms cannot be farmed to order, so buyers plan around the forest. Combining origins in both hemispheres stretches most seasons.
Spring: morels
Cultivated Chinese morels from February, Himalayan wild morels in April and May, European and North American wild morels into June. Morels dry well, so dried stock covers the rest of the year.
Summer: chanterelles
Baltic and Polish chanterelles run from June to October. Pacific Northwest chanterelles continue into winter.
Late summer and autumn: porcini, matsutake, white truffle
- Porcini: August to October in Europe.
- Matsutake: late August to October; frozen buttons extend it.
- Black trumpets and saffron milk caps: September to December.
- White Alba truffle: October to December only.
Winter: black truffle
European Périgord black truffles from December to March, then Australian truffles from June to August.
All year
Cultivated species such as lion’s mane, shiitake, maitake and king oyster are available year-round. See the cultivated range.
